Yes, that design is spot on.
Re the wiring. I would make all the connections at the thermostat board. Run a separate twin cable to each fan to the thermostat board. And you will have a third twin cable from the power supply. All six wires can be terminated into the plugs that plug into the thermostat board.
I don't think normal insulation will melt at 150 °C but if you want to protect it, cover it with silicone sleeving, or woven sleeving with fibreglass strands in it, or use some kind of standoffs to keep it away from anything hot. Or that tape you linked to sounds pretty impressive!
