ESC and Motor using Variable Power supply

Hello everyone,
I am planning to create my prototype of my AVR based drone. I'm first going to use two motors and ESC's on a balance platform to test the PID. I would like to ask if I can power the Motors, ESC's and the electronics with a variable power supply?

Let's say the supply has max of 30V, 5A and my ESC has a characteristic of 30A?

An ESC that has a 30A rating when it is powered from 30V will cause a 30V, 5A power supply to curl up and die or blow a fuse or burn out.
