zanussi oven problem

Hiya, my zanussi zz bs 772 electric built in-oven takes ages to heat u
on the fast heat up and it was heating up to 140 then going down -
put in a new thermometer, but I’m now thinking its a probe (a long tub
thats at the back) does this sound right? :
