Southern engineering an a/c unit

I'm a homebrewer and have built a cooler for fermentation. It has worked for about 8 years, but the a/c unit I used has gone south. It had mechanical controls, but the new one has electronic controls and I'm lost. I need to fool this thing into running constantly; I use a temperature controller to turn it on and off. I use another one to monitor the evaporator coil and stop the unit when the coil starts to freeze. Is there a way a dummy like me can force the electronic thermostat to run the unit so I can get down to the temperature I want?

Consulting the below referencing, you will see the bottom RED BOXED INSERT manual control category of unit and its coiled up temp sensing line that gets routed to the front evaparators cooling coils and is physically placed within the outgoing cooled air flow.
In the new unit that you have, I am suspecting a wire going to a thermistor temperature sensor, as is being shown in the larger main illustration.
So o o o o o why dont you initially see if " fooling the sensor " by separating it by progressively distancing it a bit further from the air flow will prolong continual run time.
That should make it respond by running the compressor for a longer time IF it ever reaches that threshold of turning off. Just further attempt in attaining the point where it never shuts off.
THEN you are dependent upon your other on / off control method in not cycling on for such a long time such as to overload the capacity of the system . . . . in other words don't skimp on the cooling capacity until you find that capability without overloading the air conditioner unit.
BUT if you have done this before, as you mentioned with the prior unit, you should know the old units BTU cooling capacity and that this new unit is equal or greater than the old unit.

Considering this simple mechanical solution working, nothing is needed to be involved with the electronics control aspect.
