Question: 5 Segment meter on interval

So I'm trying to plan a small project;

Using a range sensor of some sort, take intermittent readings based on ~ 0-3 meter range, and hold the result on a 5 segment led meter.

Interval range is more or less dependent on the sensor. This pretty much an always on component, and I am not really sure of the duty cycle of sensors of this type. Preferred cycle would probably be ~1s, not more than 30s. Could also be constant if the sensor functions that way.

So, I have never played with any type of range sensor, but from what I see IR may not be suited, as it appears to be shorter ranges.
Ultrasonic might work, not sure if a confined space would cause issues or not.

I know the basics to rig the segment meter, but I do not know any of the inbetween. If the sensor in question had a constant output, it would be as simple as rigging the meter to work within that range, but from what I've been reading, most of these sensors do not have a constant output.

1st though was an IC to handle the outputs and provide a constant voltage, but this is the area beyond my basic knowledge.

So based on a 0-10v output (if voltage is the simplest vs amperage?) in 5 steps, holding the results (as displayed on the meter) till the next poll.

Comments, suggestions, edumacation?

Thanks in advance.
