Multi turn potentiometer insted of regular

Greetings
I bought about a year or so ago a UNI-T UTP305 power supply.
It works great but my only problem is the coarseness of the "knobs".
Would replacing the regular 270 or 300 degrees potentiometers with multi turn ones affect performance or
would I get the desired fine adjustment.

Yes, replacing them potentiometers is a good move and will give the precision you require.

Providing the resistance and current-handling ability of the new pots are the same as the existing ones it should be ok.
