Datalogging in computer

Hi!

I have a project in which I would like to record 2 Voltage values. I thought of getting 2 ADC components to transform this voltage value into a digital value (with samplig rate of 10~100 kS/s). after having the digital value, I want to save this data in my computer or on a SD card. How do I do this?

How do I do the interface between an ADC to my computer?

How accurate do you need the recording to be? How often do you want to record it?

The accuracy is raleted to the number of bits in my adc, correct? At first I want to use 8 bit ADCs.
The phenomena I want to save happens every 200us (sinoidal like) and I was thinking of collecting 5 points every cycle. I would like to save these voltage values for few seconds at first, but in the future, I would like to save 20 minutes. Does it answer?
