Is it possible to wire a Kiln from North America, the old wire set of two hot and a neutral with no ground to European 230 v where there is just one hot wire and a neutral? in General is it possible to rectify our two hot 240 v generator down to one hot wire for European stuff . How is the wiring changed for say a jet pump in North America where it can be switched from 115/120 v over to 230/240 v? It would be great if somehow our 12 inch miter saw could be plugged in, our generator is a juice monster.

North american wiring of two hots and a Neutral results in a 3 possible connections inside the device. Hot1 to Neutral, Hot2 to Neutral, and Hot1 to Hot2. Some devices (Like my stove) rely on the neutral and one of the Hots of part of it's circuit, and both Hots for another part. If this is the case, you will still need to provide 110V to it. The electrician will know better, and won't burn down your house.
I wish you the best of luck, you should prepare for the purchase of a Centre-tapped 1:1 transformer rated for the desired power of your device. (Again, the electrician would know best.)

You could, but only if the Kiln is solely 240v, if the neutral is used at all then you would need the 240/120v transformer for the controller.
BTW, whether N.A. or Europe you should implement an earth ground.
The exception is a double insulated device.
